“Mallory’s Tocino Jerky has been manufacturing in Narangba in the Moreton Bay region since 2014.
They produce award-winning jerky made from pork, chicken, beef and kangaroo. Each batch is made by hand then air dried and grilled to perfection. Malcolm and Lory use locally sourced, grass-fed meat with 90% local ingredients – they are proud to support small farmers.
They also produce a range of marinade spice rubs – you can buy all their products online.
Background
Lory grew up making tocino pork jerky in her family’s business on the tropical island of Cebu, Philippines. They used a traditional process of air drying and then grilling.
Since arriving in Australia, Lory and husband Malcolm have been making pork jerky for family and friends.
After receiving accreditation in 2014, they began selling their tocino pork jerky at weekend markets around Brisbane. They soon added beef and chicken to the range and recently added kangaroo jerky.

Did you know?
In the Philippines, tocino is made from pork belly, wine, annatto, sugar and spices, then cured. It is cooked for breakfast or lunch, like bacon.
Traditionally, tocino was cooked over hot charcoal, then laid out on rooftops for hours under the sun to dry out and get its texture.
